Caramel color, also known as caramel, soy color, caramel pigment, is a complex mixture of red brown or black coloring formed by dehydration, decomposition and polymerization of sugar substances at high temperature. It is one of most widely-used colorant in food industry for more than thousands of years, which brings attractive and natural dark black color to food, and is one of important food additive.



Feature:

1. Caramel color is a dark brown black liquid or powder with a special sweet aroma and pleasant bitter taste.

2. Soluble in water, alcohol, insoluble in common organic solvents and oils. The aqueous solution is reddish brown or black, transparent without turbidity or precipitation.

3. Stable to light and heat.

4. It has colloidal properties and isoelectric points.

5. The PH varies depending on the manufacturing method, usually from 3 to 4.5.

Applications:

Mainly used as ideal brown and black coloring in production of food and food ingredients, sauces, processing of vegetables and meat products, cooking and seasoning, etc.
